The decision to go low carb

I decided to start this blog because the last few months have been such a learning curve for me and I thought there must be heaps of others out there who are also interested in how to eat the "low carb" way.
Here is a typical meal, our evening meal from last night in fact. This is the finished product.
Sam is just adding fresh chopped coriander as a garnish. Absolutely delicious and no carbs.

How did I come to the low carb way of eating?
I have to thank Sam, my 18-year-old who qualified as a PT (personal trainer) while he was in his final year of high school, and now works part-time as a fitness trainer while he studies full time.
I was a bit overweight after quitting smoking about 9 years ago. I think every year since I quit the dreaded habit I gained just over a kilo in weight. So now I found myself about 10 kgs overweight, and no idea really how it happened!

So my smarty-pants son came to the rescue. He himself had already changed his diet, was working out regularly and fighting fit, and tired of cooking different food or catching his disapproval when I added potatoes or rice to my meals, I decided to join him.
Not only that, but he started me on a fitness regime to assist with the process.

Anwyay, more of that later.
Today I want to share how we made the meal. It was really easy and quick. The secret is in the prep!

The other day, I noticed my local seafood section in the supermarket was selling green prawns at a very good price so I bought just under 1kg. I peeled them (I always freeze the heads and tails wrapped in multiple plastic bags until it's garbage bin night). Then I marinated the peeled green prawns in chopped fresh ginger,  chopped garlic, chopped chillies and chopped galangal with some lemon juice and sesame oil. For good measure I added a shake of Tabasco sauce and less than a teaspoon of soy sauce.

Vegetable shopping list:
1 red capsicum (pepper)
2 carrots
300 gm snow peas
1 packet of bean sprouts
fresh coriander (added fresh last)

Fry marinated prawns in wok till cooked. This only takes about 5 minutes. Remove the prawns and place on dish for later.


Chop the vegetables as for a stir fry.
Fry all the vegetables except the bean sprouts in the wok.
Add bean sprouts at the last minute and stir fry quickly.

Add cooked prawns.

Serve topped with freshly chopped coriander.


For me the secret to feeling satisfied without eating carbohydrates is to eat plenty. With meals like this one, it's allowed.

And if you have too much, this kind of meal is perfect for leftovers the next day.
